Soy protein is a "complete protein" because of the fact that it provides all of the essential amino acids for human nutrition. It is essentially identical to that of other legume pulses, which generally consist of 7 S and 11 S storage proteins. It is one of the least expensive dietary protein for the vegeratians.
Studies reveal that soybeans have the highest levels of phytic acid, an organic acid and mineral chelator present in many of the plant tissues.
